Peanut Butter Bites
Recipe:
You’ll need:
- 2 cups of creamy peanut butter
- 1 stick of butter, softened
- 2 cups of powdered sugar
- 4 cups of rice krispies
- 2 bags of chocolate chips
- 2 tbsp of Crisco shortening
Depending on the size of your bites you will have a differing amount in cookies. We made about 25 with this recipe, but feel free to double it if wanted.
Directions:
Mix the peanut butter and butter until well combined in a bowl or mixer.
Add powdered sugar about ⅓ at a time and mix well after each addition.
Gradually add rice krispies and mix slowly until well combined. Chill the mix in the fridge for at least an hour
After taking the mix out of the fridge, using a small scoop, make the mix into small separate balls, about 1 inch in size and place on foil coated cookie sheets. Place the sheets into the freezer for 10 minutes to conserve time, but if you don’t have room, back in the fridge they go for at least 30 minutes.
Melt chocolate in a bowl over a pot of simmering water just until liquid. Add crisco shortening to the chocolate when melting. Turn off the heat, but keep the bowl over the hot water.
After getting the mixture out of the freezer, using two spoons, dip each circle into chocolate and place back on the foil covered cookie sheet. (try and complete this somewhat quickly as the peanut butter will start to melt)
Chill in the fridge one last time until the chocolate is firm, then place in a covered container and keep refrigerated as you eat throughout the holidays and enjoy.
